Asian Green is a gerat book for everyone following a plant-based diet or who wants to reduce the amount of meat in their diet. You won’t find super authentic recipes here, but rather dishes inspired by Chinese or Korean cuisine that you can easily recreate at home.
Ching-He Huang focuses on health and nutrition in the recipes, rather than specific culinary traditions or recreating the taste of meat dishes as closely as possible. You will find a lot of ideas on how to prepare tofu and ensure an adequate supply of protein, how to use particular ingredients in a wide variety of recipes, how to eat various mushrooms such as shimeji or enoki and how to prepare delicious eggplant.
My favorites are a vegan and non-instant variation on the ram-don featured in the movie Parasite, a tempeh and kimchi stir fry, and a recipe for kachumber with a Xi’an twist.
