If you know anything about high-end Japanese cuisine, you surely know the chef Nobu Matsuhisa (who even came to us locally, with his Nobu Hotel Warsaw and a restaurant where you can try his famous dishes). Nobu’s Vegetarian Cookbook is his first vegetarian and vegan friendly recipe book. It will let you prepare truly stunning dishes.
It features 70 recipes for all kinds of dishes made from vegetables, from salads to sushi, “steaks”, tempura, to drinks and desserts. You will find a lot of recipes that are based almost only on vegetables, as well as those with the addition of rice, tofu or noodles. There are not only classic Japanese dishes, but also dishes with a South American twist – Nobu lived in Peru for a few years, hence his inspirations. Interspersed between the recipes are 5 mini-chapters about the key elements that define Nobu cuisine, for example miso, wasabi and yuba (tofu skin).
Brown rice paella (with dashi and soy sauce) looks amazing, as well as korokke, beloved by the Japanese, in several versions: with tofu and shiitake, and potato ones – in 5 ways. We also recommend interesting cocktails with sake, including pumpkin or soy milk. And if some recipes seem too bold for you, you can always use great ideas for dressings, sauces or flavored salts to spice up other dishes.
