In Prashad at Home the author shares the recipes she cooks for her family in her kitchen. I am captivated by such honesty and simplicity – without pretending that each day begins with some fancy feast, and dinner takes half a day to prepare.
Kaushy Patel bases her food on the culinary culture straight from Gujarat, which is full of vegetarian dishes, largely based on vegetables and legumes. What is important – when a hard-to-find vegetables appears in the recipe, the author suggests simple substitutes. I especially liked fried potatoes with fresh fenugreek and spices, renghan bharta, in which the main role is played by burnt eggplant.
All recipes in the book are vegetarian, and in addition, vegan, wheat-free or and nut-free ones are clearly marked so even people who have intolerances or allergies will easily find “safe” recipes without the need to look for substitutes.
